The Lunch Box

The Lunch Box originally was a concession shop I owned in an office building downtown Grand Rapids. My store allowed me to be gainfully self-employed while going to college. It also developed my passion for food. My initial spark for food preparation came from Rita VanderVen at Gourmet To Go Deli and Catering. She provided me with a killer assortment of sandwiches and salads to fill my deli case. Rita was the first person I knew that was passionate about their occupation. As a wedding gift she gave my wife Jodi and I ‘The New Basics Cookbook’ by Julee Rosso and Sheila Lukins. This was the ticket to the show… the world of foodies. Once I discovered a few incredible recipes I was now excited for holidays with family. Food was my icebreaker settling the nerves for large gatherings. With a boosted ego and a full belly, I settled in comfortably.
