The Gluten Free Lunch Box

The start of my journey in the gluten-free world was challenging. I loved to cook but I had little experience with baking. After a few weeks discovering the quality of gluten free food available on the shelves at the grocery store was awful (this was over 10 years ago) I decided I would simply have to make my own food. I bought a couple of cookbooks and took a trip to the local health food store. I was ready to take on the challenge. Or so, I thought. My frustration with finding the flours I needed, along with the substitutions for gravy, seasonings, cream soups, and more made every trip for groceries a game of hide and seek. A game that I often came up empty. About this time there were a few people out there that had been through the initiation to Celiac shopping and were sharing their experience, knowledge and their recipes to the rest of the world writing a blog. A Gluten-Free blog! They had worked their way through the trial and error of finding products that you would actually put on your dinner plate and not simply place it on the floor to prop open a door with. Believe me back then this was more common than you want to know of. I couldn’t get enough! I read through all of them and started to immediately put into practice their recipes. I am forever grateful for their guidance. My goal is to return the favor by sharing a compilation of what I have learned from all of them over the past 10 plus years.

There is an incredible number of gluten-free bloggers these days, the resources available are vast and the quality of retail products continues to evolve with many excellent choices. The journey for delicious gluten free foods continues to become less daunting and more an exciting challenge to anticipate with promise. I hope the ripples of knowledge, the sharing of insights learned, and the medley of recipes I have collected that I found special will increase the chances for you to enjoy your journey. I look forward to your friendship and to the beginning of a new adventure…
